Bradley Smokers were first produced in 1988 to provide commercial-grade smokers for the foodservice industry. In 1999, the company developed smaller smokers for in-home use. Many of the smokers on the market today require continual monitoring and variations in smoke and heat output and temperature create inconsistent results.

Bradley had a better idea. The company's unique system has revolutionized the smoking process. Other smokers burn chips or sawdust until they are reduced to ashes. The Bradley system utilizes a very special wood Bisquette for use in all their models. The smoker removes and extinguishes the wood before it burns to ash. The result? Smoke from a Bradley unit is up to four times cleaner than the smoke produced from loose chips. Because the wood is not releasing tars and resins, there is no bitter aftertaste that will linger on your food. Bradley uses as little heat as possible to make their smoke, and the smoke and heat are controlled throughout the smoking process.

The Designer Series Electric Smoker has 4 removable racks and separate burners for generating smoke and oven heat. This allows you to have heat with or without smoke and smoke without heat. Ingredients:
1 full rack of pork spare ribs
For rub:
1/2 cup brown sugar
3 Tbsp kosher salt
1 Tbsp paprika
1 Tbsp Cajun spice blend
For mop sauce:
1 cup apple cider
1/4 cup apple cider vinegar
3 Tbsp lemon juice
2 Tbsp garlic powder
1 Tbsp hot sauce
Hickory or Mesquite Bradley Smoker Bisquettes

Directions:

  1. 1. Mix together ingredients for rub, then coat the ribs with it and let marinate for a few hours-to-overnight in the refrigerator.
  2. 2. Preheat smoker to 225 degrees F with Bisquettes.
  3. 3. Place ribs bone side down on rack, smoke for 3 hours.
  4. 4. Whisk together ingredients for mop sauce.
  5. 5. Remove ribs from smoker and place in a pouch of aluminum foil. Pour the sauce inside the pouch.
  6. 6. Place ribs back in smoker, seam-side of the pouch facing up.
  7. 7. Smoke for 2 hours.
  8. 8. Remove from foil (beware of escaping steam) and return to smoker to firm up.
  9. 9. Smoke for another 45-60 minute or until an internal temperature of 172 degrees F is reached.
  10. 10. Remove from smoker and let rest 15 minutes before slicing and serving.
